Best Dish in NC @ Four Square

Chef Shane Ingram at Four Square Restaurant in Durham is offering up his four-course entry for the Best Dish in North Carolina contest for $35 from June 22 through July 27th. For an additional $20, each course will be paired with North Carolina wines.

Get more information about the contest, which is part of the North Carolina Department of Agriculture “Got to be NC” campaign.

First Course
Pope Farm’s Lamb Carpaccio with local bean and Four Square’s garden arugula salad, Little Tree Farm’s mustard-McRitchie Vineyard apple cider reduction

Bread Basket
Brinkley Farm’s Whole Wheat Boule with local Black Walnuts

Second Course
Flat River Nursery’s Heirloom Tomato Gazpacho Trio: green zebra, Brandywine and pineapple tomatoes
Raffaldini Vineyards Vermentino, Yadkin Valley ‘07

Entrée
Brinkley Farm’s Prosciutto Wrapped North Carolina Trout with creamed local sweet corn and grilled radicchio from Bill Dow’s farm
McRitchie Winery “Estate” Chardonnay, Yadkin Valley ‘06

Dessert
Maple View Farm’s Buttermilk Cupcakes with local blueberry mousse, Little Tree Farm’s honey cream soda shooter
Duplin Cellars “Midnight Magnolia”, Rose Hill NV

Please note that Four Square will be closed the week of June 28th – July 5th for summer break.
