Wine Dinner @ GlassHalfFull

vino wrote this on December 10, 2008

On Thursday, December 11 at 7:30pm, Glasshalfull in Carrboro will host a wine dinner with chef, educator, and author John Ash. Each course will be paired with a glass of sauvignon blanc from a different part of the world. Cost is $65 per person, plus tax and gratuity, please call (919) 967-9784 to reserve your place.

The Menu:

Amuse: Stuffed olives “Ascolana style” (Olives stuffed with chicken and procuitto)

First course: House-made local goat cheese ravioli, crispy mushrooms, red beet-vanilla sauce

Second course: Spicy salsa verde marinated speckled sea trout, braised fennel, yellow pepper confit

Third course: Pear and sauvignon blanc sorbet, curried butter cookies

John Ash is credited with contributing to the creation of “wine country cuisine” with his Sonoma County restaurant, John Ash & Co. He worked for Fetzer Vineyards as their culinary director, informing consumers of the cultural links between food and wine. He comes to Glasshalfull as a partner and spokesman for Sauvignon Republic, a wine company dedicated solely to the pleasures of the many manifestations of the sauvignon blanc grape.
